Currently, the best chipsets (the core of your motherboard) are the Intel X38 Chipset and the Nvidia nForce 780i.
If your more performance seeking and are looking for the best features and overclocking-i suggest Intel X38.
Best boards-Asus Maximus Formula (X38)

If you are looking for gaming-i suggest the nForce 780i (the 680i should do as well), as it supports TRIPLE-SLI.
Best boards- ASUS striker extreme (680i), ASUS Striker II Formula (780i)

Im currently using an Intel p35 (too poor to afford a 300 motherboard

It depends on whether your a gamer to a typical hardware user.
Definately look at ASUS offerings, the best chipsets today are the X48 and the 790i
